Oatmeal with Spiced Plums

Let the spiced plum saga continue! We love using anise and cardamom to flavour fruits. Yes, oatmeal is nutricious, but it’s the additional ingredients that’ll make it something to savour. We used plums, which are still abundant in October, thanks to the warm Okanagan weather. Enjoy these as shown in the recipe, or add yogurt, crème fraiche or coconut cream for presentation.
Serves 4
Nine plums, any kind (we used black)
4 anise stars
5 cardamom pods
2 tablespoons honey
Rolled oats, 2 cups
Instructions
Lay out a roasting pan. Slice the plums in half, remove seeds. Place anise and cardamom on several plums. Drizzle all fruit with honey.
Turn on oven to 375F. Roast plums for 30 minutes or until soft and bubbling.
Remove from pan, cool. Remove spices and any remaining seeds. Chop plums into rough chunks.
Cook rolled oats with water. Once cooked, add plums and stir. Remove from heat, serve.
