Mint Chocolate Chip Green Smoothie

This thick and creamy plant-based smoothie tastes like a milkshake, but is packed with vitamins, fiber and healthy fats. It makes a perfect easy breakfast, or healthy after dinner treat.
Serves: 1-2 servings

INGREDIENTS
- 1-2 frozen bananas
- 1½ cups nut milk
- 1 tbsp hemp hearts
- 2-3 cups spinach
- 20 or so fresh mint leaves or 1 tsp peppermint extract
- 1 cup ice
- 1 tablespoon cacao or cocoa powder
- 2 tablespoon cacao nibs
INSTRUCTIONS
- Place banana, milk, spinach, hemp hearts, mint and ice in a blender. Process until smooth.
- Add cacao nibs and briefly pulse (don't completely puree or they won't be large enough to add crunch).
- Serve immediately, garnished with whipped coconut cream and additional cacao nibs, if desired.
