Korean Wing Sauce

From Modernist Cuisine, one of our favourite sauces. It's got a bit of spice, but the pungency of gochujang (fermented red chili sauce), with the flavours of sesame, ginger and garlic are really amazing. We really enjoy this with lettuce wraps, but our friends use it to dip and cover almost everything.
Ingredients
135g (1/2 cup)
Gochujang
50g (1/3 cup)
Sugar
30g (5 tsp)
Soy Sauce
27g (2 tbsp)
Shaoxing Wine / Sake
25g (2 tbsp)
Toasted Sesame Oil
10g (1 tbsp)
Garlic, Finely Minced
8g (1 tbsp)
Ginger, Finely Minced
Steps
Combine ingredients and enjoy!
Tips
We generally like it best after a few hours, or one day in the fridge, when the flavours have had a chance to marry. Store in the fridge for 2-3 weeks (it never lasts that long).
