These are a great side dish to add to your summer meals. Light and slightly sweet, it’s a nice accompaniment for pastas and potato salads.
2 beets, peeled
1 tbsp grapeseed oil
1 tsp honey
Optional: ¼ tsp balsamic vinegar
Bring a pot of water to boil. Once water is boiling, add beets and cook till the flesh pierces easily with fork. Remove from water and slice into medallions. Heat the oil on a pan, add beets once it’s warm. Place the beet medallions to line the pan. Drizzle with honey and balsamic, if using. Turn over with a spatula once cooked. Once both sides are cooked, remove. Cover with goat cheese if you like.
