Chickpeas - filled with protein, but they need some dressing up to really sing! Nova mixes in veggies, herbs and cashew cream for brightness and flavour.
1 can drained/rinsed chickpeas
1/4 cup chopped dill
1/4 cup chopped green onion
1/4 cup chopped red onion
A few slices tomato
1/4 cup chopped roasted mushrooms
3 tbsp cashew cream or vegan mayo
1/2 a small red chili
Salt + pepper to taste
Mix all ingredients together and layer with more cashew cream, tomato, lettuce, and avocado. Filling AND delicious!
